Amatriciana pasta with a twist

The Italians will probably have a fit when they see what I have done to their recipe šŸ˜‰

Fry a pack of bacon

Add 2 cloves of garlic and fry together with the bacon

Add 1 cup of boiled down tomato and red pepper (you can get a ready madeĀ pasata) simmer

In another saucepan stir fry 4 shredded bok choy

add 2 teespoons of sesame seed and fry together

Add the bok choy mix to the tomato mix.

In the mean time you have cooked the pasta, rinsed to stop the cooking process and dressed in olive oil.

Spoon the sauce over the pasta and top with a good portion of grated cheese. Parmesan is traditional but I used a smoked gouda to good effect. Its up to you really.

PS – I am sitting in a bus on the way from Montreal and Quebec. We have been sitting in traffic – still in Montreal, now for an hour..
