Margaret’s English Tea Cake

250 g mixed dried fruit

1 small packet self raising flour – 500 g or about 3 1/2 cups

1 cup sugar

2 eggs

cold tea

milk  to get the mixture right

Soak the fruit overnight in the cold tea. If you really can’t wait, put it in the microwave oven for 40 minutes on 25% power, covered with cling film. It won’t be the same, but its a close second

Add the sugar, eggs and flour

Mix and add milk to get the mixture right

Put into a bread tin

Bake for 1 hour at 180 degrees Celsius
